This is exactly the kind of recipe that I love my instant pot for. I don’t even use it as a pressure cooker. Just simply being able to saute the meat and vegetables in the same pot I’m slow cooking in saves me time and dishes.
Agreed Judy. Also, try substituting a parsnip for one of the carrots, it adds a little more umph, and skip the super expensive pre-cut “beef stew” beef at the grocery store. Buy a round or sirloin roast (whatever is on sale) and dice that sucker yourself. It takes two minutes.
