    Glad to see more slow cooker recipes! Now where did I put that thing?

    I have found that more waxy potatoes, such as reds, hold up better throughout cooking.

    Agreed Judy. Also, try substituting a parsnip for one of the carrots, it adds a little more umph, and skip the super expensive pre-cut “beef stew” beef at the grocery store. Buy a round or sirloin roast (whatever is on sale) and dice that sucker yourself. It takes two minutes.
