    Not that it matters as you cover the top with chocolate anyway, but if anyone wants to prevent the top of the cheesecake from cracking, put a pan of water in the over as well. The steam will keep it nice and moist and should prevent most cracking on top.

    But, again, who cares if you’re covering with chocolate…. mmmmmmmm, chocolate….

    Just curious, the recipe calls for espresso beans, and the pictures show chocolate covered espresso beans. Just wondering if this was an error or if by some magical possibility you were going to next give us the spectacular recipe for chocolate covered espresso beans. ~ZiNG!!!

    Hmmm…could someone make this without the instant espresso (which I can’t find anywhere, and I;ve seen multiple recipes call for it). Maybe M&Ms or some other type of candy as a decoration… (I knwo way to many people who hate coffee as well <.<)

    … I’m willing to bet that for those of us who aren’t coffee drinkers, the coffee portion of the program can be skipped, leaving sweet, glorious chocolate cheesecake. ^.^ (And an Oreo crust for extra chocolate goodness… mmmmmm…)

    Making this at the moment. Actually made 2. Made the odd discovery of using the whisk on the mixer. Floof’d the bajezus out of it. And now, I have a light and fluffy Wake Up Cake.

    For those mixing by hand, the easiest thing to do when making a cheesecake is to “cream” together the cream cheese and sugar first. Once those two are well blended then add everything else. Room temp cream cheese makes it even easier as well.

    This was a total success at home. I had to make 2 in a row since the first one was faster than I could slice it. Too bad there’s no Graham crust in Argentina, so I used ground vanilla cookies and butter instead.

    This cake is truly wonderful. Very moist and delicious. As with other reviewers, my cake needed quite a bit more time in the oven than one hour–I think mine was in for an hour and a half. I worried that the edges of the cake might be dry and crusty with that amount of baking time, but that did not occur. I will make this again.

    I made this for Thanksgiving a couple years ago. I couldn’t find instant espresso or espresso beans and instead subbed the espresso with cheap instant coffee and the beans with white chocolate chips. The damn thing didn’t even last an hour!
