Thai Stir Fried Chicken with Cashew Nuts Ingredients: The things to chop: Chicken Breasts - 2 Red Bell Pepper - 1 Green Bell Pepper - 1 Garlic - 4 cloves Dried Japones Chilies - 4 Onion - 1/2 For the Sauce: Soy Sauce - 1˝Tbsp (20ml) Chili Paste - 1Tbsp (15ml) Oyster Sauce - 2Tbsp (30ml) Seasame Oil - 1tsp (5ml) Sugar - 2tsp (4g) The Other Stuff: Cashew Nuts (lightly salted or unsalted) - 1/2 Cup (75g) Vegetable Oil - 2Tbsp (30ml) Jasmine Rice - 1 Cup (185g) Directions: Cook rice according to package instructions. Chop: Chicken Breasts - 2 Red Bell Pepper - 1 Green Bell Pepper - 1 Garlic - 4 cloves Dried Japones Chilies - 4 Onion - 1/2 Mix together the following to create your stir fry sauce: Soy Sauce - 1˝Tbsp (20ml) Chili Paste - 1Tbsp (15ml) Oyster Sauce - 2Tbsp (30ml) Seasame Oil - 1tsp (5ml) Sugar - 2tsp (4g) Place your wok on Medium High heat (if your stove goes to 10, set it to 8) and add Vegetable Oil (2Tbsp (30ml)) to wok and let the oil heat. Once oil is hot you are ready to begin the stir fry. 1st add in the chopped: Red Bell Pepper - 1 Green Bell Pepper - 1 Dried Japones Chilies - 4 Stir and cook for 4-5 minutes 2nd add in the chopped: Chicken Breasts - 2 Continue stirring and cooking for 3-4 more minutes 3rd add in the diced/pressed: Garlic - 4 cloves Continue stirring and cooking for 2-3 more minutes 4th add in the Stir Fry Sauce. Continue stirring and cooking for 2-3 more minutes Finally, add in the: Cashew Nuts (lightly salted or unsalted) - 1/2 Cup (75g) And give those a light toasting for another 2ish minutes and remove the entire mixture from heat. Serve it over a bed of white rice and enjoy. Notes: - If you go to the store looking for “dried red chillies” you’ll find that there are many different kinds. Ideally you want thai chillies, but these are more difficult to find in many parts of the states. You can substitute those with japanese chillies (which you may find labeled chile de japones) or arbol chillies. These are easier to find in an average grocery store or tiendas - The order of ingredients and timing is important. some ingredients cook faster than others so stir fries generally go in the order of things that can cook the longest to the things that need to cook the least. - For the chili paste i used Sambal Oelek, but if you can find a good roasted chili paste that’s the best option. - This is a spicy dish. if you want to cut down on the spice use fewer dried chilies and lighten the amount of chili paste. - This is also quite flexible. Try different peppers, different sauce combos etc. if you’re a veggie i imagine this could be very very good sans chicken or with a substitue of your choice.
