The Bananarama Sandwich Ingredients: For the Cookies: Peanut butter - 1/2 Cup (130g) Butter (softened) - 1/4 Cup (60g) White sugar - 1/4 Cup (50g) Brown sugar - 1/4 Cup (60g) Eggs - 1 Milk - 1Tbsp (15ml) Vanilla - 1/2tsp (3ml) All-Purpose Flour - 1 Cup (60g) Baking Powder - 1/4tsp (1g) Salt - 1/2tsp (4g) For the Ice Cream: Bananas - 4 Cocoa Powder - 3Tbsp (22g) Chocolate Chips/Chunks - 1/4 Cup (45g) Directions: Slice 4 bananas, place the slices on a plate and place in the freezer until completely frozen. Start on the cookies Preheat oven to 375F (190C) In a bowl, cream together: Peanut butter - 1/2 Cup (130g) Butter (softened) - 1/4 Cup (60g) White sugar - 1/4 Cup (50g) Brown sugar - 1/4 Cup (60g) To that mixture, beat in: Eggs - 1 Milk - 1Tbsp (15ml) Vanilla - 1/2tsp (3ml) Then in a separate bowl combine: All-Purpose Flour - 1 Cup (60g) Baking Powder - 1/4tsp (1g) Salt - 1/2tsp (4g) Combine the contents of both bowls together by adding the Flour mixture into the Peanut Butter mixture. Mix well and you'll have the dough for your cookies. Roll tablespoonfuls of dough into balls. Place balls 2 inches apart onto ungreased cookie sheet. Press each ball with fork twice for the fancy pattern. Bake at 375F (190C) for 8-10 minutes or until edges are browned. Once your banana slices are completely frozen add them to a blender and liquify. Add: Cocoa Powder - 3Tbsp (22g) Chocolate Chips/Chunks - 1/4 Cup (45g) And blend until everything is mixed well. The bananas will have melted a bit during the blending and you'll want to let the ice cream freeze up a bit more again. However, if it freezes completely it will be very hard so just keep an eye on it. Sandwich the ice cream between the cookies and enjoy. Notes: - Reminder: i’m baking at altitude and your baking time might be shorter. check the cookies at ten minutes and take them out when the edges begin to brown. - Every aspect of this recipe is seriously really good. the cookies and ice cream can easily be made and enjoyed on their own. - You might notice that my bananas were awfully liquidy in the blender. this is because they weren’t completley frozen like they were supposed to be. the consequence of that is that i have to let the results freeze longer which makes catching it at the right consistency much more difficult - When blending frozen bananas you’ll need to be patient and pulse the blender, then scrape bananas off the sides and pulse again and repeat until smooth.
